Culinary Schools

Knowing that restaurants account for two-thirds of the seafood consumed in the United States, and recognizing that professional chefs are a highly influential group, we speculated that reaching out to culinary students — the up-and-coming chefs of tomorrow — could be a great way to round out our suite of sustainable seafood programs.

Shedd launched the Right Bite culinary school program in the summer of 2006. The culinary school partnership provides Shedd with access to future chefs as they are learning about seafood in the classroom. Partner schools agree to include sustainable seafood in their culinary curriculum. The schools also work with Shedd to incorporate sustainable options into their food-service offerings.
